Japanese Restaurant to Debut in Cherry Creek North

Uchiko, the acclaimed Japanese restaurant concept from award-winning chef Tyson Cole, will open its Cherry Creek North location on Monday, February 17, 2026.

Uchiko is opening in the former Ginny Williams Gallery at 299 Fillmore Street in Cherry Creek North and will honor the legacy of the noted Denver art collector and philanthropist through rotating art installations that preserve the location’s artistic roots.  

TWP serves as the owner’s representative on the new restaurant concept. Denver-based Semple Brown is the architect of record and Spectrum is the general contractor.

The project required renovations and partial demolition of the existing 6,530-square-foot building, a 2,280-square-foot addition, and 315 square feet of streetside patio seating. The preserved mid-century structure now spans more than 7,400 square feet, including a sunroom that floods with natural light through timber beams and expressed columns. Custom furniture and leather details by Colorado artisans complete a space with 163 seats that feel at once both intimate and expansive.

The restaurant concept leans into the glow of the hearth, pairing smoke and char with clean Japanese flavors across hot and cold dishes. Diners can expect hearth-grilled plates like oysters with koji creamed spinach, post oak grilled sea bass with brown butter dashi, and four-times-seared Denver steak, alongside fresh fish flown in daily and shareable dishes like the soft shell crab roll and roasted lobster with umeboshi butter. The premium beef dishes feature 72-hour Australian Westholme wagyu and tableside hot rock experiences. Each taste is engineered for that ideal balance of salt, fat, acid, and heat to experience the perfect bite, every time. The warmth extends to a bar program featuring craft cocktails, a curated list of Japanese whisky and sake, an extensive wine list and daily happy hour.
