La Loma Restaurants Renamed Savina’s Mexican Kitchen

Brinkerhoff Hospitality, a fixture in Colorado’s dining scene for more than 45 years, is renaming its La Loma restaurants in Castle Rock and downtown Denver to Savina’s Mexican Kitchen in tribute to Grandma Savina Mendoza, whose recipes remain central to the menu.

Savina’s Mexican Kitchen will maintain the same menu, atmosphere, and experience while representing an evolution of the brand, returning to its original roots, and celebrating Grandma Savina Mendoza, who created the recipes that inspired the concept almost fifty years ago.

“For more than 45 years, my grandfather Sonny, my father William, and I have shaped and stewarded these restaurants into what they are today.  We are now entrusting my mom, Renee, with the La Loma name in a bid to bring peace to our family and to position her for success,” said Mark Brinkerhoff, president & CEO of Brinkerhoff Hospitality.

“Letting go of the ‘La Loma’ name is bittersweet, but it’s critical to preserve the trust of our guests and their dining experiences,” added Mark. “Having two separate operators using the same name creates confusion and compromises our ability to maintain the hospitality our guests have come to know and love.”

This transition coincides with the upcoming debut of two new Brinkerhoff Hospitality concepts opening in Castle Rock this fall: The Brinkerhoff, a Mexico City-inspired grill featuring prime steaks and sushi, and Bar Hummingbird, a timeless, upscale cocktail lounge.

Brinkerhoff Hospitality also proudly built La Loma MacGregor (formerly Caldero), La Loma Parker, and La Loma DTC, which are now under separate management and not operated by Brinkerhoff Hospitality. Renée and William Brinkerhoff Jr. will continue to operate these locations under the La Loma name via their La Loma Restaurants holding group, as well as all future locations.

  • The Brinkerhoff (opening mid-September 2025) – Castle Rock
  • Bar Hummingbird (opening fall 2025) – Castle Rock

Carrying Brinkerhoff Hospitality’s restaurant legacy forward are William and Mark Brinkerhoff, who, along with their loyal team across all locations, will continue to embody the company’s tradition of hospitality and excellence.

As Mark Brinkerhoff explained, “Savina’s Mexican Kitchen will remain true to what you love. The food, the atmosphere, and the experience will not change. It will continue to be brought to you by the same dedicated team, including some who have been with us for more than 40 years. Our people are our greatest asset, and we cherish their desire to carry this legacy forward with us. While our name has changed, it has been, and will always remain, Grandma Savina’s Mexican Kitchen.”
