Colletta, a lively Italian dining experience by The Indigo Road Hospitality Group, will open in Colorado’s Vail Valley this summer at The Westin Riverfront Resort & Spa.
Colletta, meaning “collection” in Italian, is a gathering place rooted in Italian-American tradition and modern hospitality. The restaurant will feature a seasonal menu of scratch-made pastas, house-made pizzas, antipasti and locally inspired piatti, all crafted with a focus on quality and flavor. Staying true to the spirit of Italian dining, Colletta Vail Valley will offer a “family style” experience designed to be shared, alongside a full à la carte menu.
Colletta Vail Valley will serve dinner nightly and weekend brunch. Guests can enjoy a thoughtful beverage program highlighting seasonal spritzes, creative cocktails and Italian wines.
Colletta currently operates award-winning restaurants in Atlanta, Georgia and Cary, North Carolina.

Helmed by The Westin Riverfront’s Executive Chef Angel Munoz and culinary team, with support from Chef Josh Begley, culinary director of Indigo Road’s Italian concepts, the Colletta Vail Valley menu will embrace local, seasonal ingredients that shine in antipasti and scratch-made pastas.
Menu highlights will include Chicken Parmesan, Lasagna Bolognese, Spicy Soppressata Pizza and Polpette, and traditional Italian meatballs. Several dishes that are unique to the Vail Valley include Colorado Bass, Ravioli Puttanesca, Elk Saltimbocca and Rabbit Piccata.
The restaurant reflects welcoming Italian destinations, featuring mosaic marble tiles, rich red textures and exposed brick. Upon arrival, guests will notice the charcuterie bar complete with a hand crank Berkel slicer. Diners can enjoy unmatched views of Beaver Creek Mountain and the Eagle River on Colletta’s expansive patio, which offers multiple fire pits and a full-service outdoor bar.
