A Refreshed Palace Arms Reopens at The Brown Palace

Following a 15-month closure, The Brown Palace Hotel & Spa recently reopened a refreshed Palace Arms. With new Executive Chef Kim Moyle at the helm, Palace Arms comes to life with a reimagined, “Locally Sourced, Farm Fresh Inspired,” menu, as well as a reinvigorated interior, featuring all new furniture, lighting, chandeliers and more, while still preserving the Napoleonic décor and historic artistry it is known for.

Open Tuesday through Saturday, from 5 p.m. to 10 p.m., the restaurant now offers a hand-crafted, specialty cocktail menu, served tableside, complementing its award-winning wine list and newly curated steak and seafood focused menu, featuring prime cuts of beef by the ounce, Chilean Seabass and other Chef favorites. Chef Kim Moyle, the hotel’s first ever female executive chef, utilizes her wealth of knowledge and unique blend of creativity and passion for cuisine to oversee all culinary operations for The Brown Palace complex and its signature restaurant, Palace Arms. Chef has worked diligently in her short time at The Brown to capitalize on her local partnerships with Fitch Ranch and Mystic Mountain Mushrooms to ensure freshly-sourced, organic, humanely raised and GMO-free ingredients to present seasonal menus, unlike any other in Denver.

“The opportunity to breathe new life into an iconic establishment such as Palace Arms is an absolute honor,” said executive chef Kim Moyle. “I am excited to share a delectable, yet approachable menu, made for everyday dining instead of just special occasions, and we’ve worked hard to deliver classic moments with a modern twist!”

Chef Moyle brings more than 30 years of industry specific experience to The Brown Palace complex, having most recently served as the executive chef and director of culinary at Devil’s Thumb Ranch in Tabernash, Colo., where she oversaw the food and beverage operations for the property’s six dining outlets and event space.
