Baumé Dessert Bar Opens Inside Denver Union Station

Denver Union Station is excited to share that Baumé – A Dessert Bar officially opens today, Wednesday, Feb.12, offering an elegant & timeless dessert experience inside Denver’s landmark train station. Baumé will serve favorite European-inspired patisseries along with a curated Champagne list inside the newly renovated Great Hall.  

The patisserie menu at Baumé features a thoughtful selection of cakes and tarts that are designed to be familiar, crave-able, and an experience within their own right.  One signature dish is the Citrus Tart, a perfect balance of sweet and sour with bitter and creamy. The thoughtful Baumé aesthetic presentation adds to the layers and depth in flavors.  

Baumé is led by Chef Kevin McCormick, a Michelin-starred executive pastry chef with over 20 years of culinary experience, including at New York’s Per Se and Boulder’s Frasca Food and Wine. Continuing a pursuit of pastry excellence, McCormick worked as the executive pastry chef at Chicago’s Beacon Tavern and the North Pond. In 2020, he expanded his portfolio by opening Good Ambler, which quickly became a standout in Chicago’s vibrant culinary scene, earning extensive accolades including being named “Best New Bakery” by Chicago Magazine.  

“One of my favorite dishes is Baumé Paris-Brest,” said Chef McCormick. “It is named after the famous bike race from Paris to Brest and is an old-school French pastry that has seen a resurgence in the last few years. Our version is a play on the original with alternating seasonal flavors and textures.”  

The seated Baumé experience will be offered starting at 4 p.m. daily. Baumé pastries and treats will also be available for purchase to-go starting at noon daily from a retail kiosk in the Great Hall.   

Widely recognized as the heart of the Mile High City, the iconic Denver Union Station completed an extensive refresh last year that included a remodel of all 112 luxurious Crawford guest rooms and a redesign of the bustling Great Hall and The Cooper Lounge.
