First Look: Renderings of Emilia Restaurant Coming to RiNo in 2025

As construction gets ready to ramp up for restaurant concept Emilia in RiNo — opening spring/summer 2025 — Denver-based Regular Architecture has shared initial renderings of the new restaurant. Emilia will be located in a 3,700-square-foot space on the first level of The Current, a new office building in the ever-growing RiNo arts district.

“Seeing these latest renderings of Emilia truly brings this vision to life,” said Kyle Flippen, investment director at Schnitzer West. “Emilia will not only be a stunning restaurant space but also a thoughtfully crafted, elegant and innovative concept that will elevate Denver’s culinary scene and introduce diners to the Emilia-Romagna region of Italy. We feel so fortunate to welcome such an extraordinary restaurant to The Current, where it will undoubtedly become a cornerstone of RiNo for years to come.”

Emilia will represent a heartfelt ode to Italy, drawing inspiration from the diverse regions of the country with a special emphasis on Emilia-Romagna. This particular region is renowned for its rich culinary and wine-making traditions, even celebrated as the birthplace of many Italian specialties like Parmigiano Reggiano, balsamic vinegar and prosciutto di Parma. Emilia aims to harmonize the soulful essence of Italian dining with the innovative and sustainable spirit that has become synonymous with the team behind Restaurant Olivia.

Co-owners Chef Ty Leon, Austin Carson and Heather Morrison are thrilled to collaborate once again in the launch of Emilia. Chef Leon, recognized for his creative and exquisitely prepared dishes, will guide the culinary journey. Carson will work alongside two beloved Restaurant Olivia leaders, Bar Director Erika Copeland and Wine Director Scott Thomas, to curate Emilia’s innovative bar program and wine list, which will be comprised of iconic Italian producers. Completing the dining experience, co-owner Heather Morrison will infuse Emilia with the same warm and inviting hospitality that has become her signature at Olivia.

“While at Restaurant Olivia, we pride ourselves in blending Italian cuisine with global flavors, Emilia will be a pure tribute to Italy,” Chef Leon said. “We plan to feature a selection of antipasti, handmade pastas and delightful dolci, including house-made gelati. We are also excited to bring some of the beloved favorites from Restaurant Olivia to the table, reimagined with a twist that pays homage to Italy’s rich culinary diversity.”
