GH Phipps and Ramirez Hospitality Group Break Ground on Los Dos Potrillos Castle Rock

GH Phipps and Ramirez Hospitality group recently celebrated the groundbreaking for the Los Dos Potrillos restaurant in Castle Rock. GH Phipps’ Special Projects Group was awarded the project. Ely Architecture will serve as the architect.

The new, 8,2000-square-foot, $4.7 million Mexican restaurant consists of over-ex earthwork, a slab-on-grade foundation with footings throughout, a full commercial kitchen, a custom bar area, and an electronic louvered system.

This will be the fifth and largest Los Dos Potrillos location and the second location to include a brewery. When complete, the building will be able to accommodate seating for 284 patrons, including a covered patio and outdoor garden.

With four locations in Centennial (the original location), Littleton, Highlands Ranch, and Parker, Los Dos Potrillos provides customers in the South Metro area with “Real Mexican Food” while maintaining a family-friendly, “hole-in-the-wall” experience thanks to years of hard work by owner Jose Ramirez and his family.
