New Taco Spot Brings Outlaw Spirit to Golden

Pancho & Jane, a new taco restaurant serving Mexican favorites with a rebellious twist, will open in Golden in May 2024. From the team behind The Eddy Taproom & Hotel – Judge’s Choice winner at Denver’s 2023 Top Taco – Pancho & Jane will serve scratch-made tacos, family-style sides, cocktails, extensive lists of bourbon and tequila and more. Located at 16500 S. Golden Rd. – a quick 10-minute drive from downtown Golden, just outside of the city’s main street and on the growing S. Golden Road corridor – Pancho & Jane will be a down-to-earth neighborhood joint that is both community-driven and a welcoming host to catch a game, grab a bite after a bike ride through Golden or savor post-work margaritas.

The restaurant’s name takes inspiration from Francisco “Pancho” Villa, a Mexican revolutionary leader of the early 20th century, and Jane Kirkham, a 19th-century Colorado stagecoach bandit. Pancho & Jane evokes the distinct outlaw spirit of its namesakes with its vibrant atmosphere, both in dynamic energy and colorful design. Music will set the tone for casual daytime hangouts, leading into an energetic atmosphere nightly – the space will be centered around the restaurant’s 30-seat bar, equipped with a vinyl record for guests’ favorite bartenders to curate the vibe. The interior, designed by Colorado-based Studio R, will be playful through bright uses of color, Western imagery and “punny” taglines – even disco balls and neon paint in the bathrooms – all while keeping the community of Golden in mind, including an exterior mural created by a local artist.

The seasonal menu, developed by director of food and beverage, Ben Shapiro, will utilize fresh ingredients, sourced locally as often as possible, and offer simple, surprising and intentional dishes, including many creative vegetable-forward selections. Diners will enjoy everything from pistachio guacamole, potato taquitos and tres leches doughnuts to taco platters, nachos, house-made margaritas on tap and much more.

“We will bring an outlaw’s attitude to blending flavors and fresh ingredients,” Shapiro says. “Pancho & Jane will offer a high-quality, vibrant taqueria-style menu, influenced by the lifestyle of the local Golden community. With the seasonal menu, complemented by great spirits and cocktails and an unmatched vibe and energy where all are welcome, Pancho & Jane aims to be a locals’ favorite and a go-to for visitors.”

Pancho & Jane will seat 125 inside and 50 on the outdoor dog-friendly patio and will also offer a to-go window with street access to pick up menu favorites on the fun. Open from 4 p.m. to 11 p.m. Mondays through Thursdays, and 3 p.m. to 11 p.m. Fridays through Sundays, Pancho & Jane will serve dinner nightly with lunch soon to follow.
