Restaurateur and Chef Troy Guard’s TAG Restaurant Group (TRG), will open a new wine and cocktail bar, Done Deal, in November in the lobby of downtown Denver’s tallest building, Republic Plaza. The elegant lounge is set to become the go-to downtown destination for wine and cocktail enthusiasts and for business and after-work gatherings.
“A lot of businesses are either leaving downtown Denver or afraid to open up but we’re going all-in in reviving the area and what was once the most exciting part of the city. Everyone is desperate for something fresh and new and we’re so excited to give them what they’re looking for with the new HashTAG coming in 2024 and now the Done Deal opening this November.”
Guard and TAG Restaurant Group were approached by Brookfield, owners of the Republic Plaza building, with the intention of driving business back to downtown Denver. Guard was an easy choice to help revitalize the area, already having a track record of success in the the Republic Plaza building with Bubu, the build-your-own bowl weekday lunch spot, and his reputation as a leading Denver chef and restaurateur. Done Deal will offer wine, craft cocktails and local craft beers paired with smaller bites, charcuterie and appetizers.
“We are so excited to open a new concept from TAG Restaurant Group,” said Guard, “We’ve built an amazing team of sommeliers, bartenders and mixologists and it’s time we have an establishment to highlight their craft. So many business deals are made in the Republic Plaza and now they’ll have a place to celebrate.”
Guard has been a longtime advocate and face of the downtown Denver dining scene with his first restaurant, TAG, opening in Larimer Square in 2009 before closing due to the COVID Pandemic in 2020. In the Downtown area, Guard owns and operates Guard and Grace, his flagship restaurant and award-winning take on the modern steakhouse, and Bubu, with locations in Republic Plaza and Granite Tower. Done Deal joins TAG Restaurant Group’s plans for downtown expansion with another HashTAG, the boozy brunch spot, opening in the area in 2024.
