The Olive & Finch Collective will open Olive & Finch (O&F) Golden Triangle on Saturday, April 25. Located at 1140 Bannock St., O&F Golden Triangle marks the fifth location of Chef Mary Nguyen’s “fine-casual” brand, furthering her mission of building community gathering spaces in downtown Denver.
The largest Olive & Finch location yet at 4,300 square feet, Golden Triangle is designed to be a true neighborhood sanctuary, with seating ranging from a spacious 14-seat bar to a cozy lounge to community tables that encourage breaking bread with neighbors. A self-serve pastry case is tucked inside near the counter, beckoning guests with an array of scratch-baked sweet treats. The space is flooded with Colorado sun through expansive windows, highlighting a lush collection of plants and greenery, while the sidewalk patio offers a mix of sun and shade for maximum outdoor enjoyment.
Golden Triangle is leaning into the joy of a shared table with a fresh lineup of enhanced shareable plates designed for passing around with friends. O&F’s culinary team has poured its hearts into a new dinner menu that offers something special for every palate, paired with a hand-picked selection of wines, spirits and craft beers.
“From the space to the menu, our goal was to create the sort of cozy, welcoming neighborhood hangout you’ll want to visit again and again,” Nguyen says. “Our new menu leans into comfort and convenience, making Olive & Finch Golden Triangle the ideal spot for everything from grab-and-go breakfasts and quick lunches to lively happy hours and dinner dates. The vast majority of our entrees are under $20 as we want to ensure that high-quality, scratch-made food is accessible to all.”
A proud Denver native, Nguyen is a dedicated steward of the city’s growth and development. As an entrepreneur and community advocate, she believes in harnessing the power of hospitality to bring people together and strengthen communities. Beyond her success in the hospitality industry, Nguyen is deeply committed to mentorship, education and inclusive community development.
The Olive & Finch Collective currently includes five locations of Olive & Finch (Uptown, Cherry Creek, Denver Union Station, Arts Complex and Golden Triangle); Little Finch, an all-day café on Denver’s 16th Street and at CSU Spur; Olive & Finch on the Fly microstores; a food and beverage production and distribution company; and a hospitality management consulting company.
To celebrate the grand opening, Olive & Finch Golden Triangle will host weekend-long celebrations April 25 and 26:
Saturday, April 25: Olive & Finch Golden Triangle officially opens at 7 a.m.! From 3 to 7 p.m., DJ Sugabear Harris of The Drop 104.7 FM spins house hits while guests can watch local Denver artist Tatiana Cullen’s live painting activation for the ultimate happy hour. At 5 p.m., founder Mary Nguyen will raise a glass for a complimentary bubbles toast.
Sunday, April 26: Opening festivities continue with Sunday Beats and Brunch. From 11 a.m. to 3 p.m. DJ MnM spins old-school hip hop. At 1 p.m., founder Mary Nguyen will raise a glass for a complimentary mimosa toast. Throughout the day, Tatiana Cullen will continue the live painting activation.
