Owner of West Main Taproom Partners with The Parker Hotel

Pam Briere, the visionary owner of West Main Taproom and Grill, Villa Parker, Elevated Taste Catering, Grace and Co, and Parker Fashion Week, has announced a dynamic new partnership with The Parker Hotel. On December 1, 2024, Briere and her team officially took over food and beverage operations for the hotel, including one restaurant space and four premier event spaces.

With this exciting expansion comes the debut of Ovest Via Ristorante, a new Italian dining destination. Inspired by West Main’s legacy, “Ovest” translates to “West” and “Via” to “way” or “street,” paying homage to the roots that shaped Pam’s culinary journey. The kitchen will be led by Chef Victor, who brings extensive Italian culinary training and has delighted guests with his renowned dishes at West Main Taproom. Ovest Via will open its doors to the public Tuesday through Sunday, 4 p.m. to close, with a grand opening celebration on January 7, 2025.

In addition to the restaurant, this partnership unlocks four premier event spaces that will expand the offerings available to the Parker community. Guests can now book the Upper Deck, The Summit, The Roosevelt Room, and the Hospitality Room — each boasting spectacular views and curated menus from Elevated Taste Catering, led by Chef Victor.

To ensure the financial operations transition smoothly from Omaha to Colorado, Briere has hired Kristen Scott as the senior accountant. Kristen will assist with the financial transition, providing expertise and support during this exciting phase of expansion.

Anne Yakubovich, director of operations, will work closely with Pam Briere to execute the launch and management of these new brands. Chef Victor, along with Sous Chef Honorio Acosta, will be delighting taste buds at West Main, Ovest Via, and Elevated Taste Catering.

To celebrate the new partnership, the public is invited to join the grand opening of Ovest Via Ristorante on January 7, 2025, and the event spaces open house on January 18, 2025.
