Ash & Agave, a vibrant new dining concept from the team behind Blue Island Oyster Bar and Oliver’s Italian, celebrating modern Mexican cuisine and agave-forward cocktails, is coming to Cherry Creek Shopping Center.
Ash & Agave will occupy the former California Pizza Kitchen space inside Cherry Creek Shopping Center, located at 3000 E. First Ave. The approximately 4,800-square-foot restaurant will include seating for about 250 guests indoors and outdoors.
The new concept comes from Shucking Good Hospitality, a Denver-based restaurant and hospitality group with over two decades of hands-on experience in concept development, operations, and guest experience.
The restaurant build‑out is being managed by Jordy Construction as the general contractor, with architectural design by Semple Brown. The space will feature a tropical, coastal-inspired design with greenery and vibrant design elements, creating a lively, welcoming dining atmosphere.
Inspired by the flavors and lifestyle of the Mexican Riviera, the restaurant will feature a menu centered on wood- and charcoal-fired cooking, highlighting fresh seafood, charred meats, and house-made tortillas. The concept will also include a raw bar and a beverage program focused on tequila, mezcal, and other agave-based spirits.
“Ash & Agave is inspired by the vibrant and effortless lifestyle of the Mexican Riviera,” Huggard said in announcing the concept. The restaurant aims to celebrate coastal Mexican flavors while creating a lively, welcoming dining destination in Cherry Creek.
The space is expected to feature a tropical and coastal design aesthetic, with greenery and bold design elements intended to evoke the atmosphere of seaside destinations in Mexico.
Ash & Agave is expected to open this spring.
