Soda Club, a four-time Michelin Bib Gourmand–awarded fresh pasta, natural wine and cocktail bar, will open in Denver this summer at The Ramble Hotel located at 1260 25th Street. James Beard Award helms the restaurant–nominated restaurateur Ravi Derossi, a founder and owner of Death & Co, who was instrumental in bringing the acclaimed cocktail bar to Denver’s The Ramble Hotel.
A Colorado native, Derossi will bring Soda Club Denver to life alongside partner and wine director Drew Brady. Brady and Derossi opened the original Soda Club in New York City’s East Village in 2021.
“When Drew and I were envisioning Soda Club, we were inspired by the relaxed European natural wine bars that function as true neighborhood spots, encouraging a convivial atmosphere where guests can gather over shared bottles and an approachable menu,” Derossi says. “When we decided to expand Soda Club, Denver was our first choice. It’s exciting to bring this vision back to my home state in such a vibrant location.”
Under the culinary prowess of Executive Chef Amira Gharib, Soda Club has been recognized as a Michelin Bib Gourmand pick every year since opening in New York City’s East Village in 2021. Gharib, who is of Egyptian descent, leans on her unique background and culinary voice, taking a Sicilian-style approach to Soda Club’s menu.
“Sicilian food has an Arab influence that is very distinct from mainland Italy as Sicily has been a thoroughfare for other ethnicities for centuries,” Gharib says. “What we showcase at Soda Club is Italian but inclusive to the many cultures that have passed through the region.”
Soda Club Denver will offer signature and seasonally rotating fresh pasta dishes alongside Roman-style pinsa, a unique style of pizza featuring an airy, long-fermented dough made with a blend of wheat and rice flours. The team also plans to offer its popular monthly pasta-making classes in Denver.
Brady who was recognized as a Future 40 Tastemaker by “Wine Enthusiast,” will curate a 200-plus bottle natural wine list sourced from small, independent producers who favor patience over manipulation. Meanwhile, the grappa-focused cocktail program will be of the same caliber as Derossi’s other award-winning ventures Death & Co and Amor y Amargo.
Slated to open in August 2026, the team will transform the space that formerly housed Super Mega Bien into an intimate, moody, and low-lit gathering space seating 70 inside and 30 on the patio. Soda Club will offer dinner nightly, staying open until midnight during the week and until 1 a.m. on Friday and Saturdays.
