Colletta Vail Valley, a lively Northern Italian dining experience by The Indigo Road Hospitality Group, officially opened this week at The Westin Riverfront Resort & Spa Avon, Vail Valley.
Colletta, meaning “collection” in Italian, is a gathering place rooted in Italian-American tradition and modern hospitality. The restaurant features a seasonal menu of scratch-made pastas, hand-crafted pizzas, antipasti and locally inspired piatti, all crafted with a focus on quality and flavor. Staying true to the spirit of Italian dining, Colletta offers a “family style” experience designed to be shared, alongside a full à la carte menu.
Helmed by Executive Chef Angel Munoz and The Westin Riverfront culinary team, with support from Chef Josh Begley, Culinary Director of Indigo Road’s Italian concepts, the Colletta Vail Valley menu embraces local, seasonal ingredients that shine in antipasti and scratch-made pastas. Guests can enjoy a thoughtful beverage program highlighting seasonal spritzes, creative cocktails and Italian wines.
Menu highlights include Chicken Parmesan, Lasagna Bolognese, Spicy Soppressata Pizza and Polpette, traditional Italian meatballs The menu also features several dishes that are unique to the Vail Valley, including Colorado Bass, Ravioli Puttanesca, Elk Saltimbocca and Rabbit Piccata.
Colletta Vail Valley is excited to host an extensive schedule of culinary and community events, including wine dinners and pasta making classes.
Starting on July 3rd, Colletta Vail Vailley will host a weekly Friday Afternoon Club from 3 to 6 p.m. on its expansive patio that offers stunning views of the Eagle River and Beaver Creek Mountain. These festive summer gatherings will feature a mix of DJs and live local music, along with a Spritz Bar and pizza specials.
The restaurant has been designed to reflect welcoming Italian destinations, featuring mosaic marble tiles, rich red textures and exposed brick. Upon arrival, guests will notice the charcuterie bar, complete with a hand-crank Berkel slicer.
Colletta Vail Valley will serve dinner nightly starting at 5 p.m., along with weekend brunch.
Colletta currently operates award-winning restaurants in Atlanta and Cary, North Carolina.
