New Seasonally Inspired Restaurant Opens at Dairy Block

For[a]ged a modern new LoDo restaurant uniting craft and cuisine, is now open at Dairy Block. Created by the team behind Parker Garage – Brent Walker, Meghan Gold and Chef Pham – the sunlit For[a]ged space features three different dining experiences, including an upstairs mezzanine with a raw bar, a private dining room and a large whiskey-driven bar area.

A culinary leader for more than 25 years, Chef Pham has served as the executive chef of Parker Garage since 2014. Chef Pham studied under Certified Master Chef and culinary Olympic Gold Medalist Robert Mancuso and legendary French Chef Jean-Louis Palladin. He previously served as the executive chef at the award-winning Tante Louise and opened two of his own restaurants – the acclaimed Kyoto in Littleton and Restaurant Fifteen Twenty One in Pueblo. Chef Pham has hand selected Jacob Lechner, as executive chef, to oversee daily operations and assist Chef Pham as the creative force behind For[a]ged.

Chef Pham takes an architectural approach to cuisine, incorporating design, creation and construction from ingredient selection to presentation. A Murray Carter Journeyman Bladesmith, Chef Pham is instituting the forging of his own Japanese carbon steel knives as part of the concept.

Along with a full raw bar – using ingredients such as, king crab, blue fin tuna and an assortment of fish from Japan – For[a]ged serves a seasonally driven menu of dishes, including Colorado Rack of Lamb, Moroccan Spiced Duck, Cauliflower Steak, Pan Seared Barramundi and a 32 oz. Rib Eye that serves two.

The bar at For[a]ged offers more than 100 whiskey & scotch selections, along with premium cocktails developed in house with the similar approach to the kitchen, integrating fresh squeezed and internationally sourced products.

For[a]ged also features an extensive wine program, with 30 wines by the glass as well as 50 wines by the bottle, including Chenin Blanc, Pinot Noir and Zinfandel bottles under the private label of 19420 Mainstreet Brand,  produced exclusively for For[a]ged and Parker Garage by Boulder-bred winemaker Jesse Katz of Devil Proof Vineyards.

The beer program at For[a]ged highlights several exclusive brews, including beers by AC Golden Brewing, the Pilot Brewery Lab in the basement of Golden’s Coors Brewery, and Bellyslide Wit, the original Blue Moon Sandlot small batch product actually brewed in the Sandlot brewery underneath Coors Field.

For[a]ged also offers private event spaces and custom menus for groups ranging from two to 250 people, including in the mezzanine and a private dining room, which can accommodate 40 people.

For[a]ged is now open for lunch and dinner daily starting at 11 a.m.
