Nationally acclaimed Poulette Bakeshop, Marvin’s Place Coffee Co., a new coffee and bookstore concept, and Playa Bowls, an açai shop and wellness destination with locations across the country, are now open at The Juniper, the 264-unit luxury rental community on downtown Parker’s Mainstreet.
The openings mark the first three retailers to debut at the two-building property, further advancing the vision of pairing high-quality housing with thoughtfully curated, neighborhood-serving retail. As The Juniper continues its impressive lease-up, these additions further position it as both a sought-after residential address and a go-to gathering place at the heart of Parker’s thriving downtown.

Poulette Bakeshop, which was included in The New York Times’ 2024 list of the 22 Best Independent Bakeries in the United States, occupies 2,800 square feet at one of The Juniper’s four available retail spaces. Established in 2021 by Alen Ramos and Carolyn Nugent, a husband-and-wife chef duo who previously trained under world-renowned pastry master Pierre Hermé in Paris, the bakery is celebrated for its artisanal pastries, breads, and baked goods crafted using traditional French patisserie techniques. Its excellence has earned numerous accolades, including semi-finalist recognition in the 2024 and 2025 James Beard Awards. The bakery’s opening completes its move from its original Parker location to its new prime flagship space.

Located in the retail space next to Poulette Bakeshop and occupying approximately 1,500 square feet, Marvin’s Place Coffee Co. is an immersive specialty concept blending coffee, design, and architecture. Founded by Chris Gary, a veteran film and TV producer whose passion for coffee culture took him across the globe, Marvin’s Place began as a journal scribble on a Tokyo train ride in 2019 and has since evolved into an innovative hospitality experience, with the Juniper marking its inaugural location. The opening signals the arrival of a highly anticipated addition to downtown Parker, providing locals and visitors with an intentionally conceived space to connect over expertly crafted coffee and an array of books spanning design and architecture.

Playa Bowls, a vibrant açaí and smoothie concept bringing fresh, health-forward offerings to Downtown Parker, signifies the third retailer to open within The Juniper this month and occupies a 1,767-square-foot space. Known as New Jersey’s original açaí shop, the establishment serves smoothie bowls, oatmeal, juices, and more, all crafted with high-quality ingredients to inspire healthier lifestyles and bring people together. This new location is co-owned by Josh and Jackie Baker, a husband-and-wife team with strong ties to both New Jersey and Colorado. After opening their first franchise in Castle Rock last year, the couple identified The Juniper in downtown Parker as the ideal setting for their next outpost, adding a lively, wellness-oriented destination to the area’s growing retail and dining scene.
“We have been beyond excited to open Playa Bowls in downtown Parker, especially in a beautiful location like The Juniper,” said Jackie Baker, co-owner of Playa Bowls Parker. “We love places with good energy, friendly people, and a sense of togetherness, as they mesh perfectly with our mission. We’re excited to introduce our fresh, healthy, and delicious açaí bowls, smoothies, juices, and snacks to residents and visitors, and become a staple on Mainstreet.”
The Juniper is a two-building, four-story luxury rental community comprising 264 one-, two- and three-bedroom residences. Designed by Denver-based Santulan Architecture, the properties offer a contextual nod to the historic character of Mainstreet and feature a seamless blend of stately brickwork with contemporary aesthetics and modern layouts. The community is anchored by a sprawling amenity collection that includes a clubhouse, multiple fitness rooms, parking garage, expansive outdoor deck with a pool and fireplace, and two rooftop terraces featuring striking mountain views. Having come to market last spring, The Juniper is now 100% leased. It has been outfitted with nearly 14,000 square feet of ground-floor retail space intended to further activate the neighborhood, all of which has been now leased.
