Metropolitan State University of Denver has officially broken ground on its first on-campus student housing complex in the school’s 60-year history.
The 12-story Summit House, set to open in 2027, will provide 155 units and 550 student beds, a new home for the Classroom to Career Hub, and dining and retail space.

@brinkerhoffhospitality — a fixture in Colorado’s dining scene for more than 45 years — is renaming its La Loma restaurants in Castle Rock and downtown Denver to Savina’s Mexican Kitchen in tribute to Grandma Savina Mendoza, whose recipes remain central to the menu.
“Letting go of the ‘La Loma’ name is bittersweet, but it’s critical to preserve the trust of our guests and their dining experiences,” says Mark Brinkerhoff. “Having two separate operators using the same name creates confusion and compromises our ability to maintain the hospitality our guests have come to know and love.”

@pigandtiger — the Taiwanese-inspired concept from chefs Darren Chang and Travis Masar — has transitioned from a popular food stall into a full-scale restaurant with the opening of its first brick-and-mortar location at 2200 California Street on Aug 22 in Denver’s Five Points neighborhood.
The move marks a significant adaptive reuse and culinary investment in one of the city’s most dynamic urban corridors, blending Chang’s Taiwanese-American heritage with Masar’s international culinary perspective.
